My very first time with salted egg crab!

UPDATE (01/10/2020): The restaurant is still available within Resort World Sentosa, but has moved to #02-138 Festive Walk.

Singapore Seafood Republic is a collaboration between four famous seafood restaurants here: Palm Beach Seafood, Tung Lok Seafood, Jumbo Seafood and The Seafood International Market & Restaurant. Nevertheless, do you know that the restaurant actually made its first foray in Tokyo, Japan in 2008?


Crispy Fried Baby Squid (Small) S$12.00
Taste: 8.5/10

I truly enjoyed the crunchy deep-fried baby squid marinated with sweet and savoury oyster sauce. Sprinkled with sesame seeds which gave them a more robust aroma, they were sitting on a bed of crispy crackers for added crunch.


Deep-Fried Scallops Wrapped in Yam Rings S$12.00
Taste: 7/10

A whole scallop was inserted in between each ring of deep-fried yam paste which was pretty soft. While the scallops were of acceptable freshness, but I found that the ngo hiang (Chinese five-spice powder consisting of cloves, star anise, fennel seeds, cinnamon and Sichuan pepper) sauce was way too sweet without much of the promised fragrance.


Appetiser & Chili
Taste: 6.5/10

The appetiser given was a combination of cucumbers and carrots served with chunky peanut sauce which was a tad too sweet. The chili sauce was adequately spicy with a hint of ginger.


Wok-Fried Crab with Salted Eggs Seasonal Price
Taste: 8.5/10

As I've mentioned before, I'm not a fan of chili crab. Usually I'll go for my favourite black pepper crab, but the other day I just had to try a different cooking style. My virgin experience with salted egg crab was pretty memorable, for the crab was fleshy, moist and sweet, not to forget the golden yellow sauce made of salted eggs which was creamy and somewhat milky. Having said that, the sauce could do with a bit of salt since the salted eggs used weren't really salty. By the way, the price was S$64.80 for the 1.2 kg crab.


Fried Coffee Pork Ribs with Almond Flakes (Small) S$20.00
Taste: 6/10

The pork ribs were, alas, a bit disappointing as they weren't as juicy as I expected them to be. Moreover, while the coffee sauce had a heady fragrance, it was a bit too sweet for my liking. They could definitely add more almond flakes, and use a fresher strawberry slice instead as a garnish.


Stir-Fried Baby Kailan and Fresh Fungi in Oyster Sauce (Small) S$16.00
Taste: 8/10

My grandpa once said, "A table without a 'green dish' isn't ready for a meal". I ordered the baby kailan (Chinese broccoli), one of my most favourite vegetables, which retained its crunchiness. Stir-fried with fresh and juicy shimeji and oyster mushrooms, the dish also came with the fried version of the latter which added another dimension to the dish.


Supreme Seafood Fried Rice with XO Sauce (Small) S$20.00
Taste: 7/10

The staple dish of fried rice was uninspiring, although it tasted alright. Cooked with a bit of shrimps and perhaps other seafood items which were chopped so fine that I could hardly see them, the rice wasn't entirely fluffy.


Chilled Honeydew Sago S$5.00
Taste: 8/10

More often than not, I've always tried to make a room for dessert. I was thankful that the honeydew sago was pretty light on the palate without too much coconut milk, helping the digestive system instead of giving it more burden after a heavy meal. The sago bits were enjoyably chewy.

I was led to the 2nd storey of the restaurant where there weren't many people around, and thus I could have my dinner in peace. In general, while I believe that the ingredients they use daily are pretty fresh, the cooking can definitely be improved further. Pika's advice: Have four, six, eight or ten people in your party?
